The Sequatchie Cove Creamery folks like to call their region of Tennessee the “Savoie of the South”, as the majority of the cheeses that cheesemaker Nathan Arnold makes are inspired by those of the French Savoie region. Dancing Fern is a raw milk washed rind that takes after the famed French stinker Reblochon. French Reblochon has found its way onto the FDA’s raw milk watch list, and Dancing Fern is about as close it as you are going to get, being released for sale just after 60 days of age - raw milk’s legal limit in the USA. Dancing Fern is a perfect expression of high quality raw cow’s milk; the 1 lb wheels are encased in a hearty but not overbearing rind that contains the fatty paste . Dancing Fern balances decadence and funkiness in the most elegant way possible.
