A lovely pasteurized cow in the style of chevre (get it?)! Kat Spann and her team at Prodigal Farm are siphoning off some of their cultured Jersey cow’s milk curd during their Spring Fever make, and immediately freezing it! One of few cheeses that can and should be frozen until desired use, Vache has the consistency of light and fluffy chevre with the fatty buttery-ness of Jersey cow’s milk. Spread it on crostini, mix it into pasta, or just grab a spoon and dig it’s a quart of ice cream.

Note: Vache lives, frozen, in a 32oz container, so that is how it gets shipped!
