This raw cow collaboration between Homestead Creamery and Milton Creamery takes heavy inspiration from classic English clothbound cheddars. While the Flory Family makes the near twenty-pound cylindrical wheels (called truckles) from milk from their herd at Homestead Creamery, Milton Creamery takes on the aging duties. Aged over 12 months, these mammoth wheels take on incredible depth, sweetness and texture. Like Capriole Goat Cheese’s Julianna, this is an absolute crowd favorite and the cloth binding (inedible! Just peel it off before eating!) adds to the aesthetic of a cheeseboard.

Our favorite application: Go full English with a Ploughman’s lunch! Just add City Ham, some sort of pickle, and some good bread!

Tastes like: Hard butterscotch candies, rosemary, beef broth.
