How should I store my cheese?

We suggest rewrapping your wedges in the branded paper they arrived in! If that’s already found its way into the trash, wax paper is a great alternative. From there your cheese drawer, produce drawer or a designated cheese “bin” in your fridge will do- but just keep it away from the fridge fan. The paper allows the cheese to “breathe” while the drawer or bin prevents it from drying out.

Another good alternative is wrapping the cheese in wax/parchment paper and then wrapping tightly in plastic wrap. You want to avoid plastic touching the cheese directly but the tight wrap does help keep the cheese from drying out.

How long is my cheese good for?

We generally suggest eating softer cheeses within 10-14 days and firmer cheeses within three weeks. These numbers certainly aren’t set in stone but we can tell you that cheese tastes its best the more recently the wedge was cut!

What is this mold growing on my cheese?

Cheese is ripened with the help of ingestable, flavorful mold and bacteria! After a few weeks of being wrapped up, it’s not uncommon for your wedge to start growing a bit of mold or bacteria on its surface. For most situations, we suggest trimming off/scraping the moldy bit and eating what’s left! SHIPPING INFORMATION

How are your cheeses shipped?

We ship all cheese with the expectation of the box arriving within two days. We use fully recyclable packaging from box to insulation to ice packs (just refreeze ‘em!) which are intended to keep cheese cool for 48 hours. 

We ship boxes out on Mondays and Tuesdays.

My ice packs were melted! Is my cheese ok? 

Yes! Ice packs are made to melt and cheese, as a preserved + fermented food, is made to withstand a bit of warmth. Remember, cheese has several THOUSAND more years of history than refrigeration! If your cheese is WARM to the touch please email us at ericandnora@countercheesemongers.com. Melting ice packs can also result in a bit of moisture - thankfully our cheese paper has an interior “lining” which protects the cheese. Simply pop your wrapped cheeses in the fridge and the paper should dry in an couple of hours. 

Why does my box stink?!

Real cheese stinks! Your wedges have been confined to a tightly packed box for a couple of days so don’t be alarmed at getting a smack in the face of cheese smell upon opening the box! These cheeses have a wide variety of smells based on their ripening style. Feety, earthy, and funky are normal and will mellow out after even just a couple minutes of getting some “breathing room”. We also recommend unwrapping and having your cheese out at room temperature for 30-45 minutes before serving.

What are your shipping rates? 

Depending on where in the USA you are, our 2DAY air rates are anywhere between $15-$35 while overnight rates vary between $35-$65. Upon entering shipping information at checkout, you’ll be provided with pricing options!

We try to keep our shipping rates as low as possible. It’s a tricky balance between keeping cheese cool for most of its journey and keeping prices down so we ship UPS 2Day Air.  

What is your return policy?

We don’t want any cheese back! If you feel that there is an issue with how the cheese arrived, please snap a couple photos of the wrapped cheeses and the interior of the box and email us at ericandnora@countercheesemongers.com before putting your cheese in the fridge. If something went wrong, rest assured we will do our best to make it right. 

Does the recipient need to sign for the box?

No, but if you are giving the gift of cheese please let the recipient know to expect a perishable shipment. We provide a confirmation email with a tracking number upon shipment. 

Can I ship cheese to multiple addresses?

Unfortunately we require a separate shipping address for each order. If you are looking to send a bunch of cheese to multiple addresses, get in contact with us at ericandnora@countercheesemongers.com and we can work it out for you!

We are not responsible for damaged or spoiled product due to the following: 

  • Shipments to addresses of absent/unavailable recipient

    • It is the responsibility of the customer to pick-up any packages deemed undeliverable by the carrier.

  • Incorrect delivery addresses

  • Shipments left unopened
