Before we get into this wonderful world of meats, we have a bit of a bone to pick… the word “charcuterie” is a french term referring to the practice of cooking, curing, and preserving of meat. It may be part of a board of meats, cheeses and accoutrement, but for Pete’s sake let’s stop referring to the entire board as “a charcuterie”. Anywhoooo, you’re here for the meat, not our pet peeves! And what a wonderful selection of meats this is! We work directly with Smoking Goose Meatery in Indianapolis, IN, La Salumina in Hurleyville, NY, and Tempesta Artisan Salumi in Chicago, IL, for what we think is a fantastic mix of cured and cooked offerings!

Like most things, exceptional charcuterie requires high quality raw ingredients, so pampered pigs and coveted cows make up the variety of the meats we carry. And after a combined three decades on meat slicers, we know just how thickly or thinly these meats should be sliced!
