OHHHH MAN. Before Counter Cheese Caves even existed, the prospect of establishing a business with which we could purchase bulk quantities of Antonio’s Fava Nuts was incredibly enticing. Well, we set up shop, focused on building this cheese biz for a few years and, frankly, totally forgot about these little bags of insanely addictive, sometimes teeth-breakingly-crunchy favas. The best cheese pairings come from a single ingredient being prepared in a way that best brings out their depth and natural flavor. For fava beans, apparently it’s being fried and dusted with superfine salt. They are particularly good with natural rinds and maybe a nice chianti.
